List of Ingredients
2 c flour
2 c warm water
1 T yeast
1/4 c sugar
Recipe
Proof yeast in 1/2 c warm water, about 10 minutes until thick and foamy. add
remaining ingredients, mixing well in a non-metal container. Can be stored in
a glass jar, plastic bowl, or in a ziploc bag (which can be opened, stirred
or kneaded and then burped.)
Let stand overnight in a warm place with a lid--Do Not Cover Tightly. Can be
covered with waxed paper or cheesecloth for 5-10 days, if not using a ziploc
bag, until bubbly. Stir each morning.
On the 5th Day, when bubbly feed Herman:
1/2 c sugar
1 c flour
1 c milk
This is Herman's first feeding.
Count this as Day #1. Cover and let set in a warm place for 24 hours lightly
covered then refrigerate. Alway do this after feeding. Continue each
morning to stir, recover lightly and refrigerate.
On the Day #5 feed again.
On the Day #10 Herman is ready to use, divide and then feed.
Alway feed after removing what you need for baking. Continue feeding every
10 days thereafter. Mark on your calendar. Always keep at least 1c of starter
for next batch.
CAN BE DRIED AND STORED:
Instead of feeding after using all but 1 c of Herman, (or to dry extra Herman
you don't need) spread Herman thin in a pie plate. Set in a warm place, out
of sight and mind.
In a week or two, visit Herman, he will be all "cracked up" and waiting to be
placed in a ziploc bag, or in a plastic container. His bulk will be reduced
without the moisture of his youth and ready for preservation. Cover if using a
container. Place in refrigerator
TO REVIVE HERMAN:
Soak Herman in 2-3 cups of water for several hours. If you want a lot of
herman feed counting this as day #5, proceed as above.
HINTS:
Herman gets better with age and is best used every 10 days. If not used,
activate by pouring away all but 1 cup of starter and feeding.
By replenishing it every 10 days, Herman becomes self-perpetuating. Keep
Herman refrigerated in a glass jar, plastic bowl, or ziploc bag. Keep covered, but
not tightly.
Stir Herman every day and he will stay happy. Herman is best used at room
temperature for baking. So remove the night before baking.
