    Summer Blueberry Tea Bread

    List of Ingredients




    3 cups all purpose flour
    2 tsps baking powder
    1 tsp. soda
    1/2 tsp salt
    2/3 cup shortening
    1 1/3 cup sugar
    4 eggs
    1/2 cup milk
    1 1/2 tsp lemon juice
    1 cup drained crushed pineapple
    2 cups fresh or frozen(thawed and drained) blueberries
    1 cup chopped pecans
    1/2 cup coconut

    Recipe



    Sift flour and leavening. Cream shortening with sugar. Beat in
    eggs one at a time. Add next three ingredients. Add flour mixture
    gradually. Fold in fruits and nuts. Spoon into 3 greased 3 x 6
    inch pans and bake at 350F for 40 minutes. Cool 10 minutes before
    inverting on cooling rack.
