Amish Cinnamon Rolls

List of Ingredients
6 c. very warm water
4 pkgs. or T. dry yeast
1 1/2 c. lard or Crisco
4 tsp. salt
2 c. sugar
4 eggs, well beaten
5 lbs. bread flour
Recipe
Mix yeast with water, and let dissolve.
Add lard or Crisco, sugar and salt to water. Mix until lard is
dissolved.
Add a few cups flour and eggs. Mix in rest of the flour. Knead well.
Place in a greased bowl, and let rise until double in bulk.
Punch down, and let rise again.
Divide into portions and roll out about 3/4" thick.
Spread with melted butter.
Spread a thin layer of brown sugar over butter. Sprinkle with
cinnamon.
Roll up like a jellyroll.
Cut into 1" slices, and place cut side down about 1-2" apart in a
greased baking pan. Let rise again.
Bake at 375, for 15-20 mins., or until golden brown.
Ice while warm with a mixture of confectionary sugar and water.
Add maple flavoring to icing, if desired.
