    1.5lb (9 bagels)
    1 C water
    2 t cooking oil
    3 C Bread Flour
    1 T sugar
    3/4 t salt
    1 t active dry yeast

    2lb (12 bagels)
    1 1/3 C water
    1 T cooking oil
    4 C Bread Flour
    4 t sugar
    1 t salt
    1 1/4 t active dry yeast

    Recipe



    - add ingredients to bread machine and put on dough cycle
    - when finished, remove dough, punch down and let rest 10 minutes
    - divide into 9 or 12 portions, shaping into smooth balls (mine are
    never very smooth, but turn out fine)
    - punch hole through centers and stretch to 2 inches (my holes always
    close up - still good!)
    - put on greased baking sheet, cover, and let rise 20 minutes (start
    timing after 1st bagel is shaped)
    - broil 5 inches from heat, 3-4 minutes turning once (should not
    brown on either side)
    - while broiling, bring a large pot with 6 Cups water, 1 T sugar to
    boil, reduce heat
    - add bagels to water 4 or 5 at a time (doesn't matter if they touch)
    and simmer for 7 minutes turning once
    - drain on paper towels - they will more than likely fall, but will
    rise again when baked
    - place on greased baking sheet
    - mix one egg white and 1 T water and brush over bagels (this gives
    it the glaze); You may sprinkle toppings on them at this point (poppy
    seeds, sesame seeds, onion, etc.)
    - bake 375 for 25-30 minutes until browned. I usually turn mine once
    during this process
