Blueberry Cream Coffeecake

2/3 cup sugar
1/4 cup butter, softened
1 egg
1/4 tsp. lemon extract
1 cup plus 1 tbsp. flour, divided
1/2 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/2 cup milk
1 cup fresh blueberries
4 ounces cream cheese, cubed
TOPPING
2 tbsp. sugar
2 tbsp. flour
1/8 tsp. ground cinnamon
1 tbsp. cold butter
Recipe
1. Preheat oven to 375º. Grease and flour a 9-inch round pan.
2. Cream sugar and butter until light and fluffy. Blend in egg and lemon extract.
3. Combine 1 cup flour, baking powder, salt and cinnamon. Add alternately with milk to creamed mixture.
4. Toss blueberries with 1 tbsp. flour; fold into batter with cream cheese. Pour into prepared pan.
5. For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle evenly over batter.
6. Bake in preheated oven for 30 minutes or until cake tests done. Serve warm or cooled. Yield: 6 servings.
