Blueberry Roll-Ups

1 quart fresh blueberries
2 tbs sugar
2 tbs cinnamon
1 cup water
1 cup sugar
Wash and drain blueberries; set aside. Combine 2 tbs sugar and cinnamon; set
aside. Mix together water and 1 cup sugar; set aside.
Recipe
Biscuit mix:
2 cups flour
1/2 tsp salt
4 tsp baking powder
2 tsp sugar
1/4 cup shortening
3/4 cup milk
Sift flour, salt, baking powder and sugar. Cut in shortening until mixture
resembles coarse crumbs. Add milk and stir until dough follows fork around
bowl. Roll until dough is 1/2" thick and rectangular in shape.
Sprinkle dough with cinnamon and sugar mixture, covering evenly. Sprinkle
the berries on the dough, covering the dough completely. Roll the dough with
the berries inside like a jelly roll. Slice the roll in 1 1/2 inch slices.
Place face up in a 9 x 13" cake pan until pan is full.
Take the water-sugar mixture and pour over the dough and berries in the pan.
Bake at 350F until dough is golden brown. Cool about 30 minutes. Serve with
whipped cream or pour liquid cream over top of each serving. It is best when
warm. Serves 10 - 12. Store leftovers in a cool place.
