    Mashed Potato Doughnuts

    List of Ingredients




    1 cup of mashed potatoes
    1 cup of scalded milk
    1/2 cup of sugar
    2 eggs, beaten
    7 cups of flour
    1 teaspoon of salt
    2/3 cup of shortening
    2 tablespoons of yeast
    1/2 cup of warm water
    Oil for deep frying

    Recipe



    Mix the mashed potatoes, scalded milk, sugar, salt and the
    shortening well. Crumble the yeast into the warm water and
    stir untildissolved. Stir the eggs and yeast into the
    potatoe mixture. Add 3 cups of flour and beat well. Add the
    remaining 4 cups of flour or enough to make a stiff dough.
    Place in a greased bowl and cover. Let stand in a warm place
    until double in size. Roll out dough to 1/2 inch thick; cut and let rise
    again until doubled in size. Fry a few at
    a time in hot oil heated to 375 degrees. Place the doughnuts
    on paper towels to drain and shake in sugar.
