Quick Cinnamon Rolls

List of Ingredients
1 3/4 cup warm water
6 Tbsp sugar
1/2 cup oil
3 Tbsp instant yeast
1 1/2 tsp salt
2 eggs
5 1/2 cups flour
melted butter (start with about 1/8 cup - more if you like)
sugar and cinnamon (start with about 1/4 cup sugar - more if you like, sprinkle cinnamon on to cover all the dough)
optional raisins
Recipe
Mix together the following (by hand or using a dough hook on your Mixmaster): water, sugar, oil and yeast. Let set for 15 mins. then add salt, eggs and flour. Roll out to 1/2" thickness (approx. 10x20")on lightly floured surface. Spread with melted butter, sprinkle with sugar and cinnamon. Starting from the long edge, begin rolling fairly tightly. Cut into 1" slices. Arrange, cut side down, on a greased jelly roll pan or cookie sheet. let rise 15 - 30 mins. in a warm place, covered with a dishcloth. Bake at 400°F for about 12-15 mins. Cool slightly then frost.
Cream Cheese Frosting
1/8 cup butter
3 oz. cream cheese
1 tsp vanilla
2 cups icing sugar
Beat in a small bowl: butter, cream cheese and vanilla. Gradually add icing sugar and beat until fluffy.
Hints: I double the cream cheese for a tastier (less sweet frosting).
