    1 medium onion, finely chopped
    2 T. butter
    1 C. chopped, cooked prime rib or leftover beef roast
    1 medium potato, peeled and finely chopped
    1 C. strong beef stock
    1 egg, poached or fried

    Recipe



    Preheat oven to 350°F.
    Saute onion in butter until tender, not browned. Mix onion, beef and
    potatoes together to blend. Stir in beef stock. Spoon into a buttered 3
    C. baking dish. Bake for 1 hour. Shape hash like an omelet and brown
    lightly on both sides in additional butter in a skillet. Serve topped
    with 1 egg, poached or fried.
