Deluxe Chocolate Marshmallow Bars

List of Ingredients
1 1/2 sticks butter
1 1/2 cups sugar
3 eggs
1 t. vanilla extract
1 1/3 cups flour
1/2 t. baking powder
1/2 t. salt
3 T. unsweetened cocoa powder
1/2 cup chopped nuts (optional)
4 cups miniature marshmallows
Topping:
1 1/3 cups chocolate chips
3 T. butter or margarine
1 cup peanut butter
2 cups crisp rice cereal
Recipe
Preheat oven to 350. In a large bowl, cream together butter and sugar. Add
eggs and vanilla; beat until fluffy. In a small bowl, combine flour, baking
powder, salt and cocoa powder. Add to butter mixture and mix well. Stir in nuts,
if desired. Spread batter in a greased jelly roll pan. Bake for 15-18 minutes.
Remove from oven. Sprinkle with marshmallows. Return to oven and bake for 2-3
minutes longer. Using a knife dipped in water, spread marshmallows over cake.
Cool, then spread topping over cake. Chill, then cut into bars. For the
topping, combine chocolate chips, butter and peanuts butter in a small pan over low
heat. Cook, stirring constantly, until melted and combined. Remove from heat
and gently stir in cereal. Makes about 36 bars
