    Peanut Butter Chip Brownie Cups

    1 c, (two sticks) butter or margarine
    2 c. sugar
    2 tsp. vanilla extract
    4 eggs
    3/4 c. cocoa
    1 3/4 c. flour
    1/2 tsp. baking powder
    1/2 tsp. salt
    1 2/3 c. (10 oz. pkg.) peanut butter chips, divided
    1 c. nuts, chopped

    Recipe



    Heat oven to 350.

    Line 18 muffin cups (2 1/2" in diameter) with paper or foil bake
    cups.

    Place butter in a lg. microwave-safe bowl. Microwave on high (100 %)
    1-1 1/2 mins., or until melted.

    Stir in sugar and vanilla.

    Add eggs, and beat well.

    Add cocoa, and beat until blended.

    Add flour, baking powder, and salt. Beat well.

    Stir in 1 1/3 c. peanut butter chips, and nuts.

    Divide batter evenly into muffin cups, and sprinkle with remaining
    1/3 c. peanut butter chips.

    Bake for 25-30 mins., or until surface is firm.

    Cool completely in pan on wire rack.

    Makes 1 1/2 doz.
