Pumpkin Pie Bites

-----PASTRY-----
1 1/2 cups Flour -- plus 3 tablespoons
1/2 teaspoon Salt
1 1/2 teaspoons Sugar
1/2 cup Vegetable oil
3 tablespoons Milk
-----FILLING-----
2 Eggs
3/4 cup Sugar
1 teaspoon Cinnamon
1/4 teaspoon Cloves
16 ounces Pumpkin
1/2 teaspoon Salt
1/2 teaspoon Ginger
12 ounces Evaporated milk
Recipe
Mix together pastry ingredients until mixture forms a ball. Make little
balls of the pastry and press into mini muffin cups. Be sure to make the
sides high enough to hold the pumpkin mixture, or they will stick when
you try to remove them from the pan. Make the pumpkin filling, spoon about
2 tbls filling into each cup. Bake at 425F for 15 minutes, reduce heat to
350F and bake an additional 15 minutes.
