2 cups unsifted flour, spooned into cup
1 t. baking soda
1/8 t. salt
2 squares (1 oz. each) unsweetened chocolate
1 cup boiling water
1/2 cup butter
1 3/4 cups firmly packed light brown sugar
2 eggs, well beaten
1/2 cup sour cream 1 t. vanilla extract
Chocolate frosting, recipe follows
Recipe
Stir flour, baking soda, and salt in a bowl. Set aside. Place chocolate in another bowl; pour boiling water on top. Set aside. Beat butter in a large mixing bowl until soft and creamy; add brown sugar gradually, continuing to beat until creamy after each addition. Add eggs and beat smooth. To this mixture, add flour mixture alternately with sour cream, beginning and ending with flour. Stir chocolate mixture to blend; fold in with vanilla. Pour batter into a greased and floured 9 x 5 inch loaf pan. Bake in preheated 325 oven 50 to 60 minutes, or until done. Cool 10 minutes. Turn out on rack. Cool. Frost with chocolate frosting.
Chocolate Frosting:
2 squares, 1 oz. each, unsweetened chocolate
2 T. butter, softened
1/2 t. vanilla extract
Pinch salt
1 to 1 1/2 cups powdered sugar
1 egg
1/4 cup milk
Melt chocolate over hot, not boiling water. Beat together butter, vanilla and salt in a bowl. Beat in powdered sugar, a small amount at a time. then beat in egg, milk and melted chocolate. Beat well until creamy. Spoon over loaf to glaze.
