    1 c. butter, softened
    3/4 c. brown sugar
    1 egg yolk
    2 1/2 c. flour
    1/4 c. butter
    2 1/2 c. confectionary sugar, sifted
    1 tsp. vanilla
    3 T. cream

    Recipe



    In a lg. bowl, cream 1 c. butter with 3/4 c. brown sugar, until light
    and fluffy.

    Add egg yolk, and mix well, then add flour until dough forms. Chill
    for 1-2 hrs.

    Preheat oven to 325.

    Roll dough into 1" balls, and place on cookie sheet.

    Flatten to 1/8" thickness by pressing 2 times, in crosswise pattern,
    with tines of a fork.

    Bake at 325, for 8-10 mins., until cookies just begin to brown around
    edges. Remove from cookie sheets, and cool on wire rack.

    In saucepan, melt 1/4 c. butter (NOT margarine).

    Cook over low heat, until butter just begins to brown, watching
    carefully.

    Remove from heat, and blend in confectionary sugar, vanilla, and
    cream, until desired spreading consistency.

    Sandwich 2 cookies together with frosting.

    Makes 4 doz. cookies
