    Chocolate Truffle Cookies

    4 oz. unsweetened chocolate
    6 T. butter
    1 12 oz. pkg chocolate chips, divided
    1/2 cup flour
    2 T unsweetened cocoa
    1/2 tsp. baking powder
    1 tsp. instant coffee
    1/4 tsp salt
    1 cup sugar
    3 eggs
    1 1/2 tsp vanilla

    Recipe



    Melt unsweetened chocolate, butter and 1/2 pkg chocolate chips. Set
    aside. In a small bowl, mix flour, cocoa powder, baking powder, coffee
    and salt. In a large bowl, beat sugar, eggs and vanilla for 2 minutes.
    Beat in melted chocolate mixture. Then mix in dry ingredeints. Stir in
    remaining 1/2 pkg chocolate chips. Cover batter and chill for at least 1
    hour. Drop by rounded teaspoons onto greased cookie sheets. Bake at 350
    for 10 minutes. Makes about 40 cookies.
