High Tea Lemon Cookies

2 cups butter -- room temperature
2/3 cup powdered sugar
1 teaspoon lemon zest -- grated
1/2 teaspoon real vanilla extract
2 cups flour
1 1/2 cups cornstarch

1/3 cup butter -- room temperature
1 teaspoon lemon zest -- grated
1/3 cup lemon juice
4 cups powdered sugar
Recipe
Preheat oven to 350 degrees (F). Beat butter until creamy. Add powdered sugar,
cream until light and fluffy. Add lemon zest and vanilla. Beat well. Sift flour and
cornstarch into butter mixture. Roll cookie dough into 1-inch balls. Place on
ungreased baking sheet. Bake 15 minutes. It helps to refrigerate dough for a few
minutes prior to rolling. Frosting - Cream butter, then add other ingredients. Frost
cookie tops.
Note: We've made these for wedding showers and baby showers and wedding
receptions in big batches. We just packed them carefully and froze them ahead of
time and they tasted great. Hope this helps!
