    List of Ingredients




    1/4 cup butter
    1/2 cup sugar
    1 Tbsp. grated orange rind
    1/2 beaten egg (about 2 Tbsps.)
    2 Tbsps. orange juice with pulp
    11/2 cups all-purpose flour
    11/2 tsps. baking powder
    1/3 cup pine nuts
    nutmeg sugar (mix together 1/4 tsp. nutmeg with 2 Tbsps. sugar)

    Cream butter and sugar until pale and fluffy. Add orange rind, egg,
    orange
    juice and 1/4 cup flour. Beat well to combine.

    Add the baking powder and remaining flour gradually, beating well
    after each
    addition.

    Shape into a roll about 10 inches long. Roll in wax paper. Chill
    thoroughly
    for at least 3 hours or overnight.

    Preheat oven to 375.

    Spray a cookie sheet with nonstick cooking spray with flour. Cut
    cookie
    dough into 1/4-inch thick slices. Place on cookie sheet. Press two or
    three
    pine nuts on each. Sprinkle with the nutmeg sugar.

    Bake for 10 to 12 minutes until golden. Cool completely on rack.

    Makes 30 to 35 cookies.
