Peanut Butter Cocoa Cookies

1 cup butter flavored all vegetable shortening
1 cup granulated sugar
1 cup firmly packed brown sugar
1 cup extra crunchy peanut butter
2 eggs
1 tsp vanilla
2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
1 cup milk chocolate chips
Recipe
Heat oven to 350 F. Place sheets of foil on countertop for cooling cookies. Combine shortening, granulated sugar, brown sugar, and peanut butter in a large bowl. Beat at medium speed of electric mixer until well blended. Beat in eggs and vanilla. Beat until blended. Combine flour, cocoa, baking powder, and baking soda. Mix until creamed mixture at low speed until just blended. Stir in milk chocolate chips. Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased baking sheet. Bake at 350 F for 10 to 12 minutes or until edges are lightly browned. Do not overbake. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.
Yield: about 6 dozen cookies
