    Refrigerator Caramel Cookie

    Source of Recipe

    PennyAnnPoundwise

    List of Ingredients

    1 cup shortening
    2 cups brown sugar
    2 eggs, beaten
    2 teaspoons vanilla
    3 1/2 cups cake flour
    2 tsps baking powder
    1/2 tsp salt

    Recipe

Cream shortening and sifted sugar together. Add beaten eggs and vanilla and beat smooth. Add sifted dry ingredients. Mix well. Form into roll 2 inches in! diameter. Roll in waxed paper and chill overnight or unti l ready to use. Slice 1/8 in thick and bake in a moderate oven (350F) 10 minutes. Makes 100 cookies which are thin, crisp, and keep well.

**My note: I've never bothered to sift the brown sugar. Perhaps this is due to the age of the cookbook and the greater tendency at that time for the brown sugar to clump in damp weather?

If you are using regular all-purpose flour instead of the cake flour, remove 2 tbsps of flour per cup and 1 tbsp of flour for the half measure, or measure out 3 1/4 cups flour.
