Crockpot Herbed Pot Roast

List of Ingredients
4 pound beef roast
1 onion, sliced very thinly
2 cloves, minced garlic
2 tsp. salt
1/4 tsp. black pepper
1/2 tsp. dried crushed rosemary
1/2 tsp. dried crushed thyme
3/4 cup red wine, or herb vinegar
3 tbsp. all-purpose flour
1/4 cup water
Recipe
Brown the roast on all sides in a large skillet. Remove to
plate or platter. In the same pan saut� the onion till just
softened, adding a little olive oil if the pan is dry. Remove
the onion and add it and the garlic to the crockpot. Place
the roast on top of them. Sprinkle with the herbs, salt,
pepper. Pour in the wine or vinegar. Cover and cook on
high for about 5 hours. Measure out 2 cups of the slow
cooker liquid into a pan. Whisk the flour and cold water
together in a cup or small bowl, and stir in to the liquid.
Bring to a boil, reduce heat and simmer about 10 minutes,
stirring occasionally. Serve in a gravy boat with the roast.
Or slice the roast, place on a platter and pour over the
gravy, then serve.
