Apple Sour Cream Pie

1 recipe Single Piecrust
2 Tbs unsalted butter
3 lbs baking apples, peeled, cored and sliced into eighths
1 cup granulated sugar
1 tsp vanilla
1 cup chopped walnuts
3/4 cup packed dark-brown sugar
3/4 cup all-purpose flour
1 tsp ground cinnamon
1/4 tsp salt
6 Tbs unsalted butter, cut into pieces and chilled
3/4 cup sour cream
1/8 tsp grated nutmeg
1 egg, lightly beaten
Recipe
1 Heat oven to 375°.
2 On floured surface, roll dough for piecrust into 12-inch circle. Fit dough into 9-inch pie pan; form stand-up edge; crimp.
3 Melt butter in large saucepan. Add apples and 1/2 cup granulated sugar; cook, stirring, 12 to 15 minutes, until barely tender. Add 1/2 teaspoon vanilla. Remove from heat.
4 Mix together nuts, brown sugar, 1/2 cup flour, ground cinnamon and 1/8 teaspoon salt in medium-size bowl.
5 Rub in butter with fingertips until mixture is crumbly.
6 Mix sour cream, remaining granulated sugar, salt, flour and the vanilla in a bowl. Mix in nutmeg and egg.
7 Drain apples; add to sour cream mixture. Spoon into shell. Top with nut mixture. Place on baking sheet.
8 Bake in 375° oven 55 minutes, until apples are tender. Tent with foil if browning too quickly. Cool 4 hours.
9 Makes: 10 servings. Prep: 25 minutes. Cook: 12 to 15 minutes. Bake: at 375° for 55 minutes.
