Autumn Apple Spiced Cheesecake

List of Ingredients
**CRUST**
1- 1/2 cups graham cracker crumbs
1/4 cup brown sugar
1/2 teaspoon ground cardamom
1/4 teaspoon cinnamon
1/3 cup butter -- melted
**APPLE LAYER**
2 pounds cooking apples (about 6)
1/4 cup sugar
1/4 cup butter -- cut into small pieces
1/4 teaspoon cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
**CHEESE LAYER**
2 8 oz packages cream cheese -- softened
2/3 cup sugar
2 teaspoons vanilla
1 teaspoon fresh lemon peel -- grated
4 extra-large eggs (or 5 large eggs)
Recipe
CRUST: Mix all ingredients together in a large mixing bowl. Blend
completely. Press on bottom and an inch up sides of 9" springform pan.
Set aside. Preheat oven to 325ºF.
APPLE LAYER: Peel and core apples and cut into eights. In a large, heavy
skillet cook the apples with the sugar, butter, and spices, stirring
frequently, just until the apples start to caramelize. Arrange the
apples
over the crust.
CHEESE LAYER: In a large mixing bowl with electric mixer beat the cream
cheese until fluffy. Gradually beat in sugar. Beat in vanilla and lemon
peel. Beat in eggs, one at a time. Pour mixture over apples.
Bake at 325ºF. for 65 minutes, or until lightly browned. Turn off oven
and keep cheesecake in oven with the door slightly opened for one hour.
Cool in pan on wire rack. Chill for several hours. Remove from pan to
serve.
Makes about 12 servings.
