Caramel Apple Cake

1 1/2 cups original bisquick
2/3 cup granulated sugar
1/2 cup milk
2 medium cooking apples, peeled and sliced (2 cups)
1 Tbs lemon juice
3/4 cup packed brown sugar
1/2 tsp ground cinnamon
1 cup boiling water
sweetened whipped cream, if desired
Recipe
Heat oven to 3 50°. Mix Bisquick and granulated sugar in medium bowl. Stir in milk until blended. Pour into ungreased square pan, 9x9x2 inches. Place apple slices on batter; sprinkle with lemon juice. Mix brown sugar and cinnamon; sprinkle over apples. Pour water over apples. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Serve warm with Sweetened Whipped Cream.
High Altitude (3500-6500 ft): Not recommended.
VARIATION: This recipe would also make a great Caramel Pear Cake. Just use 2 cups of sliced peeled pears instead of the apples.
SPECIAL TOUCH: For a festive presentation, top each serving of the cake with whipped cream and a piece of cinnamon stick or apple slices.
