    1 cup fine graham cracker crumbs
    3 tbsp melted butter
    3 tbsp brown sugar, light or dark
    1 pkg (8 oz.) cream cheese
    3/4 cup granulated sugar
    3 eggs, separated
    1 tsp vanilla
    Dash salt
    1 cup whipping cream
    Fruit, in season, for garnish such as berries, peaches or kiwi

    Combine the graham cracker crumbs with the butter and brown sugar until
    crumbly.

    Press the crumbs into the bottom and sides of an 8 inch cake pan. Reserve
    some crumbs for the top.

    In a large mixing bowl, beat the cream cheese until soft. Add the sugar and
    egg yolks. Beat until light and fluffy. beat in the vanilla.

    In another bowl, whip egg whites with dash of salt until stiff. Fold into
    cheese mixture.

    Whip cream until stiff. Fold into cheese mixture until blended.

    Turn the mixture into the prepared cake pan. Sprinkle the reserved crumbs
    over the top.

    Cover with plastic wrap. Freeze until firm.

    Remove from freezer about 20 minutes before serving so that the dessert will
    be easier to slice.

    Garnish with fruit or berries.
