    9" baked pie shell (homemade or store bought)
    24 large marshmallows
    1/3 cup fresh lemon juice
    1/3 cup water
    Grated rind of 1 lemon
    5-6 drops yellow food coloring, if desired
    1 1/2 cup whipping cream, stiffly whipped

    Recipe



    In pan, heat marshmallows, lemon juice, water and lemon rind, stirring
    constantly just until marshmallows are melted. Add food coloring. Chill until
    mixture mound slightly when dropped from spoon. Fold in whipped cream. Pile into
    baked pie shell. Chill until set, 2-3 hours. Serve cold. Garnish with whipped
    cream and sprinkle with lemon rind, if desired.
