    Mocha Chocolate Chip Cake

    List of Ingredients




    - 1/2 cup hot strong brewed coffee
    - 1/4 cup finely ground coffee
    - 2 tablespoons instant coffee granules
    - 2 cups all-purpose flour
    - 2 teaspoons baking powder
    - 2 teaspoons ground cinnamon
    - 1/4 teaspoon salt
    - 1 cup vegetable oil
    - 1-3/4 cups granulated sugar
    - 3 eggs
    - 2 teaspoons vanilla
    - 1/2 cup semisweet chocolate chips

    Preheat oven to 350 degrees F. Line a 9x5 inch
    metal loaf pan with greased, parchment paper.

    In a bowl, combine brewed coffee and finely ground
    and instant coffee, stirring well. Set aside to cool.

    In a medium bowl, combine flour, baking powder, cinnamon and salt.

    In a large bowl, using electric mixer, beat oil,
    sugar and eggs until smooth. Add cooled coffee mixture
    and vanilla, beating well. Add flour mixture and beat
    on medium-high speed for 10 seconds, just until blended.

    Pour batter into prepared pan. Sprinkle chocolate chips
    over top, lightly pressing some of the chips into batter.
    Bake in preheated oven for 65 to 70 minutes or until a
    tester inserted into center of cake comes out clean.

    Let cool in pan on rack for 15 minutes. Remove
    cake from pan and let cool completely on rack.
