1 cup butter (no substitutes), softened
1/2 cup shortening
1 pkg (3 ounces) cream cheese, softened
2 1/2 cups sugar
5 eggs
3 cups cake flour
1 tsp baking powder
1/2 tsp salt
1 cup buttermilk
1 tsp lemon extract
1 tsp vanilla extract
Recipe
Preheat oven to 325 F. Grease and flour a 10 inch fluted tube pan. In a large mixing bowl, cream butter, shortening, and cream cheese. Gradually add sugar. Beat until light and fluffy. Add eggs, one at a time. Beat well after each addition. Combine the dry ingredients. Add to the creamed mixture alternately with the buttermilk. Stir in the extracts. Pour into prepared 10 inch fluted tube pan. Bake at 325 F for 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes. Remove from pan to a wire rack. Cool completely.
Yield: 12 to 15 servings
