    Strawberry Snowbank Pie

    1 pie shell (9 inch size) -- baked
    2 cups strawberries
    1 1/2 cup sugar
    1/2 cup water
    1 pinch salt
    1/2 teaspoon cream of tartar
    3 egg whites
    1/2 teaspoon almond extract
    1/2 teaspoon vanilla extract

    Recipe



    Fill the pie shell with the berries. In a saucepan, combine the sugar, water, salt, and cream of tartar and boil the mixture until it spins double threads.

    In the large bowl of an electric mixer, beat the egg whites until stiff. Add the syrup mixture, almond extract, and vanilla. Continue beating until peaks form.

    Pour the mixture over the berries and chill the pie for 1 hour.
