Triple Chocolate Silk Pie

4 oz unsweetened chocolate, chopped
1 cup sugar
3/4 cup butter, no substitutes
1 tsp vanilla
3/4 cup egg product, refrigerated or frozen & thawed
1 9 inch baked pastry shell
SEMISWEET CHOCOLATE TOPPING:
3 oz semisweet chocolate
1/4 cup whipping cream
3/4 cup whipping cream
WHITE CHOCOLATE TOPPING:
3 oz white baking bar
1/4 cup whipping cream
3/4 cup whipping cream
stand up designs, optional
Recipe
1 For filling, melt chocolate in a heavy small saucepan over very low heat, stirring constantly till the chocolate begins to melt. Immediately remove chocolate from the heat and stir till smooth. Cool.
2 Beat sugar and butter in a medium mixing bowl with an electric mixer on medium speed about 4 minutes or till fluffy. Beat in melted chocolate and vanilla. Add egg product, 1/4 cup at a time, beating on high speed after each addition and scraping the sides of the bowl constantly. Spoon the filling into Baked Pastry Shell. Cover and chill for 5 to 24 hours or till set.
3 To serve, carefully spoon the Semisweet Chocolate Topping into one side of a pastry bag fitted with a large star tip. Spoon White Chocolate Topping into the other side. Pipe topping in a lattice pattern on top of chocolate filling. Decorate with stand up designs, if desired.
4 Makes 10 servings.
5 Semisweet Chocolate Topping: Melt 3 ounces chopped semisweet chocolate with 1/4 cup whipping cream; cool. Beat 3/4 cup whipping cream in a small bowl with electric mixer on low speed till soft peaks form (tips curl). Add chocolate mixture. Continue beating on low speed just till stiff peaks form (tips stand straight).
6 White Chocolate Topping: Melt 3 ounces chopped white baking bar with 1/4 cup whipping cream; cool. Beat 3/4 cup whipping cream in small mixing bowl with an electric mixer on low speed till soft peaks form (tips curl). Add baking bar mixture. Continue beating on low speed just till stiff peaks form (tips stand straight).
