2 Cups All-Purpose Flour
1 1/2 Cups Sugar
1/2 Cup Shortening
1 Cup Milk
3 1/2 Teaspoons Baking Powder
1 Teaspoon Salt
1 Teaspoon Vanilla
3 eggs
Recipe
Heat oven to 350F. Beat all ingredients in large
bowl on medium speed, scraping bowl constantly,
until blended, about 30 seconds. Beat on high speed,
scraping bowl occasionally, 3 minutes. Pour into
paper-lined medium muffin cups, 2 1/2 x 1 1/4 inches,
filling each half full.
Bake until wooden pick inserted in center comes out
clean, 20 to 25 minutes. Immediately remove from pans.
Cool completely. Frost if desired.
