Chocolate Peppermint Patties

7 cups confectioner's sugar
7 tablespoons cocoa powder
1 can (14 oz.) sweetened condensed milk
1/2 cup butter, softened
1 teaspoon peppermint extract
24 oz. chocolate candy coating, chopped
1 package (12 oz.) semisweet chocolate chips
Recipe
In a large bowl, combine sugar and cocoa. Add condensed milk, butter, and mint extract; beat until well blended. Shape mixture into 1-inch balls and flatten each to make a 1-1/2 inch-diameter patty. Place patties on baking sheets lined with waxed paper, and freeze 30 minutes or until thoroughly chilled.
In top of a double boiler, melt candy coating and chocolate chips over hot (not simmering) water. Remove double boiler from heat. Remove 1 dozen patties at a time from freezer. Placing each patty on a fork and holding over saucepan, spoon chocolate mixture over patties. Return to wax-paper-lined baking sheets. Let chocolate harden. Store in airtight container in refrigerator.
Note: They also freeze well!
