White Chocolate Peppermint Patties

List of Ingredients
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
4 ounces white chocolate -- chopped in 1/4" pieces
1/2 cup sugar
6 tablespoons unsalted butter
1 large egg
2 teaspoons pure vanilla extract
4 ounces peppermint candy -- chopped in 1/8" pieces
Recipe
Preheat oven to 325 degrees.
Combine flour, baking powder and salt. Sift. Set aside.
Heat water in bottom of double boiler over medium heat. Melt the white
chocolate over the hot water until completely melted and smooth.
Transfer to
bowl and set aside until needed.
Place the sugar and butter in the bowl of electric mixer. Beat on
medium for
4 minutes until smooth. Scrape down sides of bowl, then beat on medium
for 2
more minutes until very smooth. Add the egg and vanilla and beat on
medium
speed for 1 minute until well combined. Add the melted chocolate and
beat on
medium for 1 minute until well combined. Scrape down sides of bowl.
Add the
sifted dry ingredients and mix on low until well combined, about 30
seconds.
Add the chopped candy and mix on low until well combined, about 30
seconds.
Using heaping tablespoon of dough for each cookie drop onto nonstick
baking
sheets.
Bake for 9 minutes until lightly golden brown around edges.
Remove cookies and cool to room temperature.
Store in tightly sealed plastic container.
