List of Ingredients
1 lb ground beef
1 medium onion, chopped
1 green pepper, chopped
4 cloves garlic, minced
1 tsp allspice
1 tsp cinnamon
1 Tbs cocoa powder
1 Tbs cumin
1 Tbs chili powder
1/4 tsp cayenne pepper 2 bay leaves
1 tsp ground cloves
1 tsp salt
1 tsp black pepper
1 tsp vinegar
2 tsp Worcestershire
1 (15-ounce) can tomato sauce
1 can red beans
1/2 lb cheddar cheese, shredded
enough spaghetti for your family
Recipe
Brown the meat, onion, bell pepper, and garlic until meat is done and vegetables are soft. Add all the other ingredients plus 1 1/2 quarts water. Bring to a boil, then lower heat to a simmer. Cook down for an hour or two. Serve over hot spaghetti with cheddar cheese on top. You can add raw onion with the cheese, too. Don't eat this thinking it's a Texas style chili; it's not. But it's out of this world! It's also not authentic Skyline chili. In Cincinnati they boil the meat, omit the bell pepper, use more vinegar, and layer the beans and onions (if desired) with the cheese and spaghetti. Although it's delicious that way, I have adapted the recipe to suit my Cajun taste buds.
