    Spicy Chicken Tortilla Casserole

    List of Ingredients




    2 tablespoons vegetable oil
    2 cups chopped green bell pepper
    2 cups chopped onion
    4 cloves garlic, finely chopped
    8 each boneless skinless chicken breast, chopped
    48 fluid ounces salsa
    2 cans sliced olives - I left this out, it seems a little too rich
    with olives added.
    12 each corn tortilla, cut into halves
    4 cups shredded monterey jack cheese
    2 cans cream of mushroom soup
    2 cans cream of chicken soup

    Recipe



    1. Preheat oven to 350*

    2. Cook bell pepper, onion, and garlic in oil for 2-3 minutes
    or until tender.

    3. Add chicken and cook until done.

    4. Stir in salsa, olives, and soups.

    5. Layer tortillas with soup mixture and cheese

    6. Cover and bake 20-25 minutes or until cheese is melted
