    1 large onion
    3 cups apple cider vinegar
    2 pounds dark brown sugar
    64 fluid ounces catsup
    1 ounce liquid smoke flavoring (Wright's for the
    brand)
    1/4 pound butter
    6 teaspoons paprika
    6 teaspoons chili powder
    4 teaspoons dry mustard
    4 teaspoons salt
    4 teaspoons pepper
    4 teaspoons cayenne pepper
    garlic cloves (opt) -- ground
    jalapeno chile peppers (opt) -- ground
    celery salt (opt) -- to taste

    Mix spices well and set aside. Blend onion with 2 cups of vinegar in blender and pour into kettle. Add 1 cup vinegar and 2 pounds sugar. Then stir in spice mixture. Add catsup and turn burner on medium high. Add liquid smoke and 1/4 pound butter. Stir more as mixture heats up, until it steams. (Does not have to boil.) Pour into containers and keep refrigerated after it cools down. Sauce keeps for months when refrigerated. (Recipe may be cut in half or doubled as you desire -- give sauce or recipe to your friends and family -- They will love it!)
