    1/2 cup butter or margarine

    good 3/4 cup sugar

    3 egg yolks

    3 middle-sized, boiled, cold potatoes

    good 3/4 cup almonds

    grated zest from 1 lemon

    3 tbs flour

    1/2 tsp baking powder

    3 egg whites



    Lemon crème:

    2 egg yolks

    2 tbs sugar

    2/3 cup whipping cream

    fresh juice from 1/2 lemon



    Decoration:

    flaked toasted almonds

    Recipe



    Cream butter and sugar. Add egg yolks, one by one. Rice the potatoes and grind the almonds, then add potatoes, almonds and lemon zest in the batter. Mix flour with baking powder and stir it in. Beat the egg whites until stiff and gently fold them in.



    Spread out the batter in a roasting pan, measuring approx 10 x 14” and dressed with greased, floured baking paper. Bake at 400F for 20 – 25 minutes. Allow the cake to cool slightly and then lift it up with the help of the paper. Allow to cool on a rack.



    Lemon crème: Beat egg yolks and sugar until fluffy. Beat the cream until rather stiff and fold this into the cream. Flavor with lemon juice. Spread the crème on top of the cake, cut in squares and sprinkle with flaked, toasted almonds.
