1/2 cup butter, softened
1/4 cup fresh or frozen (without syrup, thawed) raspberries, at room
temperature.
2 T. sifted powdered sugar
Recipe
Cream the butter, berries and sugar together until the mixture is evenly pink
throughout. Form into a log, about the size of a stick of butter and wrap in
wax paper. Seal with plastic wrap or freezer paper, and freeze until firm.
Store in the freezer or refrigerator until ready to use, but softened slightly
before serving. This is a wonderful breakfast treat when slathered on toast,
waffles, or an English muffins. This is a great use for raspberries that are just
a shade too ripe. And its rosiness makes it a beautiful gift to behold,
nestled in a basket alongside some good bakery stuff. Makes one 4 oz. log.
