4 slices bacon, cut in 1/2-inch pieces
2 tablespoons chopped onion
1/4 cup thinly sliced celery
4 eggs
2 tablespoons water
1/2 teaspoon salt
Recipe
Sauté bacon in 10-inch frying pan. When partially cooked, add onion
and celery. Sauté over medium heat until bacon is cooked and
vegetables are limp.
In the meantime, beat eggs, water, and salt in a small bowl. Pour egg
mixture over cooked vegetables in frying pan. Cover and cook over low
heat until eggs are almost set. Turn over and cook on other side.
Yields 3-4 servings.
