4 slices bacon, cut in 1/2-inch pieces
2 tablespoons chopped onion
1/4 cup thinly sliced celery
4 eggs
2 tablespoons water
1/2 teaspoon salt
Recipe
Saut� bacon in 10-inch frying pan. When partially cooked, add onion
and celery. Saut� over medium heat until bacon is cooked and
vegetables are limp.
In the meantime, beat eggs, water, and salt in a small bowl. Pour egg
mixture over cooked vegetables in frying pan. Cover and cook over low
heat until eggs are almost set. Turn over and cook on other side.
Yields 3-4 servings.
