    3/4 pound fresh bay scallops -- rinsed and drained
    1/2 cup milk
    Juice of 1 lemon
    1/2 stick butter -- cut into bits and softened
    1/3 cup minced green onions
    1/3 cup fine bread crumbs
    1/3 cup shredded parmesan cheese
    1 teaspoon dried thyme

    Clean scallops by discarding the small, tough muscle from the side of each
    scallop. In a small bowl, combine the scallops and milk. Cover and chill
    for 1 hour.

    Drain the scallops and pat dry. Transfer to a shallow baking dish and
    sprinkle with lemon juice and dot with butter. Salt and pepper scallops to
    taste and sprinkle green onions over top.

    Bake at 450º for about 5 minutes, or until scallops are opaque.

    Mix bread crumbs, Parmesan cheese and thyme in a small bowl and sprinkle
    mixture over scallops. Broil the scallops about 3 inches from heat for 1-2
    minutes, or until crumbs are browned. Serve immediately.

    Note: May use halved sea scallops if bay are unavailable.
