Beer Battered Deep Fried Cod

1 package cod fillets -- thawed, approx 12 oz
1 cup flour
1 each egg -- divided
4 tablespoons beer
1/4 teaspoon salt
5 tablespoons milk
5 tablespoons cold water
oil for deep frying
Recipe
Preheat deep fryer oil or heat oil in frying pan (we used a wok with excellent results).
Mix flour, egg yolk, beer and salt thoroughly. Add half the milk and half the water and stir until batter is smooth. Stir in remaining milk and water a little at a time until desired batter thickness is reached.
Beat egg white until forms stiff peaks, then gently fold it into the batter.
Rinse fish in cold water and pat completely dry.
Coat fillets in batter and deep fry 4 to 5 minutes or until golden brown, turning occasionally to keep from sticking to pan or other filets.
