Cornmeal Fish

5 tablespoons flour
AND
5 tablespoons corn meal
1/2 teaspoon garlic powder
salt and pepper -- to taste
3 tablespoons butter
6 fish fillets -- thawed if necessary
1/3 cup grated Parmesan cheese
Recipe
Preheat oven to 400 degrees.
On a dinner plate, combine flour, corn meal and seasonings. Melt
butter in shallow baking dish. Dredge fish in flour mixture and place
in baking dish. Turn fish to coat with butter; then sprinkle with
Parmesan cheese.
Bake for 8 to 10 minutes or until fish flakes easily with a fork. OR
If it is still too hot in your neck of the woods to turn on the oven,
in a skillet over medium high heat, heat 1 tablespoon of vegetable
oil and sauté fish WITHOUT the Parmesan cheese. When the fish is
browned on both sides and flakes easily with a fork when tested,
(about 4-5 minutes one each side, depending on the fish), then pull
from the pan and top with the cheese.
