    Crab Cakes with Homemade Mayonnaise

    List of Ingredients




    1 lb crab meat, flaked
    1 egg
    1/4 cup butter, melted
    1/4 cup bread crumbs
    1/2 cup finely chopped green onion
    1 tbsp lemon juice
    1/4 tsp Tabasco sauce
    2 tsp Worcestershire sauce
    1 tbsp homemade mayonnaise ( recipe follows)
    1 tsp Dijon-style mustard
    1/3 cup fresh dill, finely chopped
    1/2 tsp salt
    1 1/2 cups vegetable oil, for frying

    Homemade mayonnaise:
    2 egg yolks
    1 tbsp lemon juice
    1 cup vegetable oil
    1/4 tsp cayenne pepper
    1/4 tsp salt
    1/4 cup green onion, chopped, optional

    Recipe



    With your hands, mix together all the ingredients for the crab cakes, except the oil.

    Form into 12 equal patties. Refrigerate for 30 minutes.

    In a large sauté pan, fry the crab cakes in hot oil, 2 to 3 minutes on each side, or until brown and crisp on the outside.

    Serve immediately with homemade mayonnaise.

    For Mayonnaise:

    In a food processor or blender, mix together egg yolks and lemon juice. With the motor running, add vegetable oil in a slow and steady stream until mixture thickens. Mix in cayenne, salt and chopped green onions, if used.
