    400g ( approx 1lb) boneless, skinless fish fillets
    1 egg
    1/2 cup milk
    1/2 tsp curry powder
    1/2 tsp salt
    1 cup self raising flour

    Recipe



    Cut the fish into tiny cubes, i.e. 1/2"
    Beat the egg, milk and seasonings with a fork until mixed
    Add the flour, then the fish.
    Mix gently til combined
    Add extra flour if required to make a fritter consistency
    Cook tablespoonfuls of the batter in hot oil, turning once.
    The fish will be cooked when the batter in the middle of the battercakes is
    cooked
    Serve immediately with lemon wedges or tartare sauce
    I make this often, it really stretches the fish a lot further than just
    fillets alone, great when you have an extra mouth to feed unexpectedly.
