Fish Cakes

List of Ingredients
6 tablespoons butter
1/3 cup chopped green onions
1 2/3 cups mashed potatoes
1 tablespoon sour cream
6 ounces flaked cooked fish
1 egg
1/4 teaspoon dry mustard optional
salt and pepper to taste
3 tablespoons minced parsley
dried bread crumbs
1 tablespoon olive oil
Recipe
In skillet heat 2 tablespoons butter; add onions and cook 5
minutes. Blend together potatoes, 1 tablespoon of the butter and sour cream. Combine with the fish. Beat together egg, mustard, salt and pepper. Stir in the onions and parsley. Combine with the fish mixture. Form in to eight cakes. Dip each cake in to the bread crumbs. Heat the remaining butter and oil in a skillet. Add the cakes and cook slowly about 3 minutes on each side. Makes 8
