Garlicky Scallops and Shrimp

6 large sea scallops
6 to 8 large shrimp -- peeled
flour -- for dusting
2 to 3 tablespoons olive oil
1 clove garlic -- finely chopped
1 tablespoon fresh basil
2 to 3 tablespoons lemon juice
salt and pepper
Recipe
Rinse the scallops under cold running water to remove any sand or grit.
pat them dry using paper towels and cut in half crosswise. Season the
scallops and shrimp with flour, shaking off the excess.
Heat the oil in a large frying pan over high heat and add the scallops
and shrimp.
Reduce heat to medium-high and cook for 2 minutes, then turn the scallops
and shrimp and add the garlic and basil, shaking pan to distribute them
evenly. Coke for 2 minutes more until golden and just firm to the touch.
Sprinkle over the lemon juice and toss to blend.
VARIATION: To make a richer sauce, transfer the cooked scallops and
prawns to a warmed plate. Pour in 4 tablespoons dry white wine and boil
to reduce by half. Add 1 tablespoon unsalted butter, whisking until it
melds and the sauce thickens slightly. Pour over the scallops and
shrimp.
