Light and Crispy Fish Fillets

oil for deep fat frying
1 C. pancake mix
1/3 C. club soda
1 lb. pkg. frozen fish fillets (not breaded), thawed, drained
1/2 C. buttermilk
Recipe
Heat oil in deep fat fryer or 3 quart saucepan to 375°F. In medium bowl,
stir together 1/2 C. pancake mix and club soda. Dip fillets in
buttermilk, then coat with remaining 1/2 C. pancake mix. Dip coated fish
into pancake and club soda mixture. Fry, turning once, until deep golden
brown. (3-4 minutes). Makes 4 servings.
