    4 oz. lobster meat
    2 Tbsp. butter
    1 Tbsp. flour
    1/2 cup heavy cream
    1/2 cup light cream
    Dash of sherry (optional)
    1/4 tsp. salt
    Dash cayenne pepper
    Paprika

    Recipe



    In a medium saucepan, melt the butter. Add the lobster meat and cook
    over moderate heat for 3 minutes, stirring constantly so the lobster
    doesn't burn.

    Remove lobster meat. Stir in flour and cook for 2 to 3 minutes over
    medium heat.

    Add cream, light cream, sherry, salt, and cayenne pepper. Cook,
    stirring constantly, until soup is slightly thickened and very hot.

    Add the lobster meat back to the pot and heat for a minute or so.

    Divide into two bowls and sprinkle with paprika.
