Potato Chip Fried Fish

1 pound fish fillets -- thawed if frozen
1 beaten egg
2/3 cup potato chips -- finely crushed
dash pepper
oil for frying

Thaw fish, if frozen. Rinse fish and pat dry with paper towels. Cut
into 4 serving size pieces, if needed. Measure thickness of fish. In a
shallow dish combine egg and 2 tablespoons water. In another dish
combine crushed potato chips with pepper. Dip fish into egg mixture
and then coat with crushed potato chips.
In a large skillet, heat 1/4-inch cooking oil. Add half of the fish in
a single layer. (If fillets have skin, fry skin side last). Fry fish
on 1 side until golden. All 3 to 4 minutes per side for 1/2-inch
thickness and 5 to 6 minutes per side for 1-inch thick fillets. Turn
carefully. Fry till second side is golden and fish flakes easily with
a fork. Drain on paper towels. Keep warm in a 300 degree oven while
frying remaining fish. Serves 4.
