    6 each cod fillets -- thawed if frozen (or use other
    available white fish)
    Salt and pepper
    3 tomatoes -- chopped

    2 tablespoons green onion -- chopped
    3/4 teaspoon basil -- crushed
    3/4 teaspoon oregano
    3 teaspoons butter
    1/2 cup shredded Monterey jack cheese
    3 tablespoons grated Parmesan cheese

    Cut cod into serving-size pieces; place in buttered baking dish.
    Sprinkle with salt and pepper. Combine tomato, onion and seasonings;
    spoon over cod.

    Dot with butter. Bake at 450 degrees 8 to 10 minutes or until fish
    flakes easily when tested with a fork. Sprinkle with cheeses; bake
    until melted.
