Sauteed Sea Scallops in Mustard Sauce

1 lb Sea Scallops
2 Tbs Olive Oil
2 Med Shallots, minced
¼ C Dry white wine
3 Tbs Dijon Mustard
¼ C water
1 Tbs Cold butter cut into bits
2 scallion greens, cut diagonally ¼ "
Recipe
Wash and clean scallops. Heat 1 ½ Tbs Olive oil in skillet on high heat until it is
very hot! Sauté scallops 1 to 2 minutes on each side until golden brown. Transfer
to plate, cover to keep warm.
Add remaining oil to skillet along with the shallots and cook until softened. Add
wine, bringing to a boil and deglazing the pan for 1 minute. Stir in water and
mustard. Reduce until yield is 1/3 C or so. Add butter and combine into sauce.
Season to taste with salt and pepper. Add scallions and spoon sauce into serving
plate over scallops.
